Minimizing Gas Usage – Shift to Electrical Equipment

Considering the recent geopolitical situation in the Middle East, which does not appear likely to resolve in the near future, we must be mindful of our commercial gas consumption. As you are aware, the government has already curtailed commercial gas supply until further notice.
To ensure smooth and uninterrupted kitchen operations, all teams are advised to shift to electric and electrical cooking equipment wherever possible. Please follow the guidelines below:
COMBI OVEN
Use the combi oven for all boiling and steaming requirements, including rice preparation and staff meals.
INDUCTION COOKING
Carry out as much cooking as possible on induction, especially for à la carte orders. If required, please procure additional induction units and induction-compatible cookware.
TANDOOR
Temporarily stop preparing staff tawa rotis using gas-operated machines or tawas. Instead, provide tandoori rotis. If necessary, consider outsourcing as a last resort.
ELECTRIC TAWA
Arrange an electric tawa for breakfast preparations such as dosa, chapatis, and parathas.
ELECTRIC DEEP FAT FRYER
Discontinue the use of oil kadais for frying and switch to electric deep fat fryers.
Gas usage must be kept to an absolute minimum and should only be used where no viable electric alternative is available.

No one can predict how long the Middle East crisis will continue. Therefore, it is important that we prepare for the worst while hoping for the best.
